Beer Battered Avocado Tacos

Ingredients

  • 1 Hass avocado
  • 2 cups Panko bread crumbs
  • Beer batter (recipe follows below)
  • Seabird sauce (recipe follows below)
  • 8 (4-inch) white corn tortillas
  • Green cabbage, shredded, for garnish
  • Red cabbage, shredded, for garnish
  • Diced red onion, for garnish
  • Fresh lime wedges, for garnish
  • Cooking Directions

    1. In a medium dutch oven or deep-fryer, fill oil to a depth of 3 to 4 inches (no more than halfway up the sides of the pan.) Heat oil to 375 degrees F over medium-high heat.

    2. Quarter a Hass avocado (or cut into sixths, depending on size).

    3. Toss cut avocado in Panko breadcrumbs, until coated.

    4. Dip coated avocado wedges in beer batter, and carefully drop into hot oil. Fry wedges, in batches, until golden brown — about 2 to 4 minutes. Using a slotted spoon, remove slices and drain on a paper towel-lined plate.

    5. Warm corn tortillas wrapped in foil in the oven, or by lightly grilling them.

    6. Assemble the tacos: Layer 2 warmed tortillas per taco and top with a fried avocado wedge. Garnish with seabird sauce (recipe below), green and red cabbage, a sprinkle of red onion, and a squeeze of fresh lime juice. Serve immediately.

    SEABIRD’S BEER BATTER

    2 cups Mexican beer

    2 cups all-purpose flour

    2 teaspoons salt

    2 teaspoons sugar (or agave syrup)

    1 teaspoons baking powder

    2 teaspoons Sriracha (a garlic-chili sauce)

    Combine all ingredients in a blender and blend until smooth.

    SEABIRD SAUCE

    1 large jar (approx 20 ounces) vegenaise

    1 large handful fresh cilantro

    2 jalapenos

    Pinch of salt

    4 cloves garlic, peeled

    Juice of 2 limes

    Combine all ingredients in a food processor, except vegenaise and process until combined. Add vegenaise and pulse until mixture comes together.

    One Year

    I can’t believe it’s been exactly a year! I miss Bailey so much! I can’t believe he’s gone. Now Lindsay Stout and Uncle Brian too. Awful. Just awful. :-( 

    On the upside, this day last year, other than having Bailey pass away and receiving the news, was actually a really good day. … - What makes today (this year) worse is, one of the two people I spent this day with last year, is also dead and gone (Lindsay Stout). I miss her so incredibly much. Last year was the best summer of my life and soooooo much of it had to do with Lindsay. She was one of the greatest people that I have ever met. This past year has been pretty unkind…. Except getting Richie. I love him. We’ve definitely already had more than our fair share of trials.

    This is me, wanting to do things, but not doing them. I need to start to be a DOer! Right now I am not “doing” because I am house sitting and don’t have any of my stuff here. 

    I need to stop making excuses. :-(

    My 500 Days of Summer


    I wanna start off by saying that I am sorry to all my readers. I have been neglecting my blog therefore have been also been neglecting you (my reader) as well! I’ve been up and down this entire summer and now that it has come to an end, I will probably be writing here more! I started the summer with an amazing training regiment (cycling & diet) that consisted of constant cycling in the mornings followed by an easy commute to work. I would normally log in roughly 30-50 miles a day and maybe try to get an easy city cruise in on the evenings. My summer started off well until the unexpected happened! Yes that’s right I met a girl, unfortunately there are no words to describe how I felt about her except for if you were fortunate enough to have met her with me, your immediate thoughts would have been “I get it”. Many of you that know me, know that I’m kind of an arse towards women and pay them no mind/attention but this girl (let’s call her “summer”), summer and I “clicked”…(If your familiar with the movie, I’ll tell you now that this story pretty much has it’s similarities with the movie). I met Summer at a Tuesday bike night (tarck tuesdays) gathering and she was one of the very few girls that was into “tarcking”. At first she was just another girl on a bike in my eyes but after seeing and chatting up with her a few more tarck tuesday nights, I had thought to myself there could be more to this girl so I think I’ll try to dip my toe into the water. It wasn’t really until a Friday night bike ride (Cmass) is when I thought I would give this a shot. In the beginning of the ride I was pretty much chill but was trying to strategize a way to try to get to know her more (hit me up for more info). But to make a long story short, I get a text from Summer later on that evening asking why I didn’t hang out with the rest of our group? (right then I knew I had a shot) The next 3 day’s went by fast as we were texting and hanging out quite frequently. It was fun and exciting but on the third day is when I attempted to kiss her and boy was it worth it! The timing couldn’t have been more perfect (no homo). We spent many nights together but also many nights separated (her call not mine). So throughout the rest of the summer (july and august) we had many ups and some downs mostly due to her fickleness and constant inconsistent feelings, I for some stupid reason didn’t want to give up! I’m not one to give up easily unless the other party gives up (which unfortunately was yesterday). Sorry I have to stop. Call if you want the rest/more in depth of the story or I may continue this at a later date.

    Emailing with Lindsay…

    Man, I wish I were there too!! I ended up being really productive and ran a bunch of needed errands on Friday, instead of falafel (which no one else was able to do, hence why I skipped it). But yes, I am so excited to be neighbors in just a few days!!! :-D 

    I went to the Jorts party on Friday night. That was a lot of fun! Missed you at it! 

    Clearly I am substituting texting you while on my dog walks with emailing you. Haha. Okaaaayyy, talk to you later, have a fantastic day!!!!

    Rest In Peace Bailey Maxwell Waller, October 31, 1995 - June 27, 2010. You lived a long, wonderful life. Everyone who has ever met you has loved you. The entire (immediate) Waller Family adores you with all of their hearts. Thank you for being there for me during my most formative, and memorable years. You were, in short, the best dog ever. I love you so so so so so so so so so so so so so much. I miss you terribly.
